My all time favorite healthy salad dressing! I love this on some mixed baby greens, with some jicama, tomato, carrot, avocado, onion and bell pepper!
Recipe:
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar
3 cloves garlic
3Tbsp fresh lemon juice
2 Tbsp fresh parsley
1 tsp himalayan salt
1/2 tsp dijon mustard
1 Tbsp raw honey
Combine all ingredients in a blender or food processor and blend until smooth. Refrigerate dressing. If it solidifies just hold at room temperature for about 30 minutes before using. Shake before serving.
