Pineapple Mango Salsa





  • I adapted this recipe from Taste of home. This is also their photo- am I the only one that is the WORST at taking photos of the food I make? Seriously, by the time it is made I need to EAT it! This is a fairly forgiving recipe so I also sometimes add tomatoes or cucumber if I have it. 

  • 1 cup chopped peeled mango
  • 1 cup chopped fresh pineapple
  • 1 cup chopped red pepper
  • 3 tablespoons minced fresh cilantro
  • 2 shallots, diced
  • 2 tablespoons fresh lime juice
  • 1 serrano pepper, peeled, seeded, and chopped
Combine everything in one bowl and I serve it over grilled chicken. I actually usually triple the recipe so I can have food for the next few days.
